- ๐ Mash the Raspberries: Mash the raspberries (reserving a few for decoration) and mix them with 50 g of sugar. Spoon this mixture over the cookie crumbs in the verrines. Refrigerate.
- ๐ฅ Make the Cream: In a bowl, whisk the egg yolks with the remaining sugar until the mixture becomes pale and creamy. Fold in the mascarpone until smooth.
