Indulge in an irresistible French pastry: the Chocolate Mille-Feuille. This gourmet treat combines the lightness of puff pastry with the richness of a smooth chocolate ganache. Perfect for impressing guests or treating yourself to a luxurious dessert!
Ingredients:

250 g puff pastry
2/3 cup milk (15 cl)
2/3 cup heavy cream (15 cl)
4 egg yolks
3/4 cup granulated sugar (150 g)
9.5 oz dark baking chocolate (270 g)
Directions:
Prepare the Puff Pastry:
- Roll out the puff pastry and cut it into 15 rectangles measuring 4.5 x 2.5 inches (12 x 6 cm).
- Place the rectangles on a baking sheet lined with parchment paper. Refrigerate for 30 minutes.
Brush and Bake:
- Brush the rectangles with a mixture of egg yolk and a little water.
- Cover with another sheet of parchment paper and place a second baking sheet on top to weigh them down.
- Bake at 410°F (210°C) for 20 minutes, until golden.
Make the Chocolate Ganache:
- Heat the milk and cream in a saucepan over medium heat until just simmering.
- In a bowl, whisk together 3 egg yolks and the sugar until the mixture is pale and creamy.
Thicken the Cream:
- Slowly pour the hot milk-cream mixture into the egg mixture while whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring continuously, until thickened.
Incorporate the Chocolate:
- Finely chop the chocolate and pour the hot mixture over it. Stir until smooth and glossy.
- Allow the ganache to cool to room temperature, then transfer to a piping bag and refrigerate for 1 hour.
Assemble the Mille-Feuille:
- Alternate layers of puff pastry rectangles and chocolate ganache.
- Finish with a top layer of puff pastry.
- Dust with powdered sugar or decorate as desired.
