  2. 🥛 Prepare the Yogurt Velouté: In a bowl, mix the yogurts with the maple syrup and almond extract. Whisk until smooth and refrigerate.
  3. 🌰 Toast the Almonds: In a dry, non-stick skillet, toast the sliced almonds for a few minutes until golden. Set aside to cool.
  4. 🍶 Assemble: In serving bowls, pour the apricot velouté and yogurt velouté simultaneously for a layered or swirled effect.
