Chocolate Bavarois with Red Berry Coulis

A silky and decadent chocolate bavarois paired with a tangy red berry coulis for an elegant dessert. Perfect for impressing your guests or treating yourself!


📝 Ingredients (Serves 6)

For the Chocolate Bavarois:

  • 🍬 125 g granulated sugar
  • 🥛 25 cl whole milk
  • 🍫 30 g unsweetened cocoa powder
  • 🌿 8 g gelatin (4 sheets)
  • ❄️ 40 cl heavy cream (chilled)
  • 🥚 4 large egg yolks

For the Coulis and Decoration:

  • 🍓 250 g strawberries
  • 🍇 1 small container of raspberries
  • 🍋 Juice of 1 lemon
  • 🍬 50 g powdered sugar

📋 Instructions

1️⃣ Prepare the Chocolate Bavarois:

  1. 🔥 Bring the milk to a boil in a saucepan. Soak the gelatin sheets in cold water to soften.
  2. 🥣 In a bowl, whisk the egg yolks with the granulated sugar until pale and fluffy. Gradually add the hot milk while whisking continuously.
  3. 🌡️ Pour the mixture back into the saucepan and cook over very low heat, stirring with a wooden spoon, until it thickens enough to coat the back of the spoon. Avoid boiling.
  4. 🍫 Remove from heat, stir in the softened gelatin sheets and cocoa powder, and mix well. Strain the mixture through a fine sieve into a large bowl and let it cool completely.
  5. ❄️ Whip the heavy cream into stiff peaks. Gently fold the whipped cream into the cooled chocolate mixture.
  6. 🥄 Lightly wet a large mold or individual molds for the bavarois. Pour in the mixture and refrigerate for at least 5 hours or until fully set.

2️⃣ Prepare the Red Berry Coulis:
7. 🍓 Rinse the strawberries and hull them. Reserve a few whole berries for decoration.
8. 🍇 Place the remaining berries in a saucepan with powdered sugar and 10 cl of water. Cook over medium heat for 5 minutes.
9. 🍋 Blend the berries into a puree and stir in the lemon juice. Strain the coulis through a fine sieve and let it cool.

3️⃣ Serve the Bavarois:
10. ❄️ When the bavarois is fully set, briefly dip the mold in warm water to loosen it. Carefully unmold onto a serving plate.
11. 🍶 Drizzle with the red berry coulis and decorate with the reserved fresh berries. Serve immediately and enjoy this elegant treat!
