A timeless Italian dessert, this tiramisu combines creamy mascarpone, delicate ladyfinger biscuits soaked in coffee and amaretto, and a dusting of cocoa for a luxurious treat. Perfect for entertaining or a special indulgence!

For the Tiramisu Base:

  • 🥚 3 eggs
  • 🧀 250 g mascarpone
  • 🥛 3 cl heavy cream (or milk)
  • 🍪 150 g ladyfinger biscuits
  • 🍪 100 g amaretti cookies
  • 🍬 100 g granulated sugar
  • 🍸 3 cl amaretto
  • 🌟 2 g gelatin sheets (1 sheet)
  • 🍫 2 tablespoons unsweetened cocoa powder
  • 🌟 1 pinch of salt

For the Syrup:

  • ☕ 2 shots of espresso
  • 🍸 5 cl amaretto

📋 Directions:

  1. 🍳 Prepare the Mascarpone Cream (Day Before):
    • Separate the egg whites from the yolks.
    • Whisk the yolks with the sugar until pale and creamy. Add the mascarpone and amaretto, whisking until smooth.
  2. 🌿 Incorporate the Gelatin:
    • Soak the gelatin sheet in cold water to soften.
    • Heat the cream (or milk) until warm, then dissolve the softened gelatin in it. Add this mixture to the mascarpone cream, mixing well.
  3. 🥚 Whip the Egg Whites:
    • Beat the egg whites with a pinch of salt until very firm peaks form.
    • Stir one-third of the whipped egg whites vigorously into the mascarpone mixture to lighten it. Gently fold in the remaining whites using a spatula, lifting the mixture to maintain the airy texture.
  4. Prepare the Syrup:
    • Mix the espresso shots with the amaretto.
  5. 🧁 Assemble the Tiramisu:
    • Dip the ladyfinger biscuits in the coffee-amaretto syrup and arrange them in a glass dish or individual serving cups.
    • Spread half of the mascarpone cream over the biscuits.
    • Add another layer of soaked biscuits, followed by the remaining mascarpone cream.
    • Refrigerate overnight to allow the flavors to meld.
  6. Finish and Serve (Day Of):
    • Before serving, dust the top with unsweetened cocoa powder using a fine mesh sieve.
    • Garnish with amaretti cookies for a decorative touch. Serve chilled and enjoy this decadent treat!
