Apple, Passion Fruit, and Mango Compote

📝 Ingredients:

  • 🍏 4 apples, peeled, cored, and quartered
  • 🌴 6 passion fruits
  • 🍋 Juice of 1 lemon
  • 🍬 80 g granulated sugar
  • 💧 10 cl passion fruit juice
  • 🥭 2 mangoes, peeled and diced
  • 🌿 A few mint leaves for garnish

📋 Directions:

  1. 🍏 Cook the Apples: In a saucepan, combine the apple quarters, 2 tablespoons of water, lemon juice, and sugar. Cook over low heat for 15 minutes, stirring occasionally.
  2. 🌴 Add Passion Fruit: Scoop out the pulp from the passion fruits and add it to the apple mixture along with the passion fruit juice. Cook for an additional 5 minutes.
  3. 🌀 Blend and Cool: Pass the mixture through a food mill or blend it until smooth. Allow the compote to cool in the refrigerator for 2 hours.
  4. 🥭 Prepare the Mangoes: Peel the mangoes and cut them into small cubes.
  5. ❄️ Serve: Divide the chilled compote into serving bowls. Top each with mango cubes in the center and garnish with fresh mint leaves. Serve well-chilled.
